Pound Cake
2 sticks (1 cup) unsalted butter, softened, plus additional for buttering pan
3 cups sifted cake flour (not self-rising; sift before measuring) plus additional for dusting
3/4 teaspoon salt
3 cups sugar
7 large eggs, at room temperature 30 minutes
2 teaspoons vanilla
1 cup heavy cream

Special equipment: a 10-inch tube pan (4 1/2 inches deep; not with a removable bottom) or a 10-inch bundt pan (3 1/4 inches deep; 3-qt capacity)

1. Put oven rack in middle position, but do not preheat oven.
2. Generously butter pan and dust with flour, knocking out excess flour.
3. Sift together sifted flour (3 cups) and salt into a bowl. Repeat sifting into another bowl (flour will have been sifted 3 times total).
4. Beat together butter (2 sticks) and sugar in a large bowl with an electric mixer at medium-high speed until pale and fluffy, about 5 minutes in a stand mixer fitted with paddle attachment or 6 to 8 minutes with a handheld mixer. Add eggs 1 at a time, beating well after each addition, then beat in vanilla. Reduce speed to low and add half of flour, then all of cream, then remaining flour, mixing well after each addition. Scrape down side of bowl, then beat at medium-high speed 5 minutes. Batter will become creamier and satiny.
5. Spoon batter into pan and rap pan against work surface once or twice to eliminate air bubbles.
5. Place pan in (cold) oven and turn oven temperature to 350°F. Bake until golden and a wooden pick or skewer inserted in middle of cake comes out with a few crumbs adhering, 1 to 1 1/4 hours. Cool cake in pan on a rack 30 minutes.
6. Run a thin knife around inner and outer edges of cake, then invert rack over pan and invert cake onto rack to cool completely.

Past Carbonara

Spaghetti
3 eggs
3-4 cloves of garlic
plenty of grated parmesan
bacon
salt
pepper
bit of olive oil

Salt the water for the pasta and let that start to boil. While waiting, grate parmesan, peel the cloves of garlic, cut the bacon into bits. Cook bacon in a frying pan with a bit of olive oil. When the bacon looks almost done, add in garlic. Mix egg with salt and pepper. When the pasta has boiled. Drain and put back in pot. Put parmesan and bacon+garlic on top of it and pour the olive oil from the pan as well. Then pour the egg and begin mixing. Mix until you think it's been mixed enough.

Serve with more black pepper.

Sure, it's not original nor is it all too genuine. It's still really easy to make as well as being really good.

My family usually eats these for the holidays, since they're so fatty and rich, but it's a good recipe to have if you want to make something delicious and easy. Be sure to have a lot of people coming over if you make them, the recipe makes a lot.

Sausage balls
2 lb sausage (I like to mix and match the spicy and mild sausages)
1 block of cheddar cheese, shredded
1/2 cup of milk
1 and 1/2 cups of Bisquick

1) Mix it all together by hand. It will be extremely nasty and messy, but it won't be well mixed if you do it any other way.
2) Preheat oven to 350 degrees.
3) Roll into 1-inch balls on large cookie sheet. You may need to do several batches.
4) Cook 20-30 minutes.

Kodiak's Swedish Meatballs:

>Meatballs
Get some finely ground meat, either beef or a beef/pork mix. Put it in a bowl, and add one raw egg per 500g of meat. Mix this thoroughly with your hands. Shape it into golf-ball sized balls.
Fry the meatballs on medium/high heat with a decent amount of butter, rapeseed oil, or mix thereof. When done, put them on a plate and put a lid over them to keep them warm.

>Sauce
Put two tablespoons of wheat flour into the frying pan and mix it with the fat. Add 4 deciliters of milk (You can substitute up to half with cream) and 1-1/2 bouillon cube. Bring almost to a boil while stirring. Add some ground black pepper, and let simmer for a minute or two. Finally, add a teaspoon or so of soy sauce.

>Mashed potatoes
Get some mealy/starchy type potatoes. This is vital. Count about 3-4 per serving. Peel them, and slice them into 1/2 inch thick slices, and boil them for about 10 minutes. Check if they're done with a fork, and pour the water out.
Now, grab a big tea mug similarly sized container, put 50g (or more..) of butter butter into it. Fill up with milk, and put it in the microwave for say 2 minutes. Pour into the potatoes, and mash with a potato masher. Mash sloppily, leave some small chunks. Then, stir with a big spoon and add more milk until it's a fluffy, creamy consistency. Salt it until it tastes slightly salty (XBOX HUEG amounts), and add some black pepper and freshly ground nutmeg.

Serve with lingonberry jam. I promise, it's AWESOME. They should have it at Ikea.

This recipe makes over 1 hundred cookies, I make them and give them to everyone at Christmas time. You can also roll out the dough and cut into gingerbread men---HOWEVER--- they will be crispy and not soft like how these are.

Amish Ginger Snaps
350F 12-15mins
3 cups sugar (plus ½ cup)
2 ¼ cup shortening
3 eggs
¾ cup dark molasses
3 tbs ground ginger
1 tbs cinnamon
2 tbs baking soda
1 ½ tsp salt
~6 ½ cups flour (more if needed dough should be firm, more firm than playdough)

Cream sugars and shortening. Add wet. Add spices and leavening. Gradually add flour, dough should be very stiff. Make 1 inch balls, roll in sugar, and BAKES... I hope you have a free day cause it's going to take all day. These do freeze well thought :)

1 pound okra, sliced
2 tablespoons vegetable shortening
3 tablespoons butter
1 onion, chopped
1/2 cup chopped celery
1 pound fresh shrimp, peeled and deveined*
1 jar fresh oysters (check for shells)
2 cloves garlic, chopped fine
1 tablespoon chopped green bell pepper
1 can (10 1/2 ounces ) tomatoes
2 sprigs parsley, chopped
1 bay leaf (remove before serving)
2 teaspoons Cavender's Greek Seasoning**
2 quarts water or fish stock
1 bunch green onion, chopped
1/2 pound crabmeat or 1 dozen whole crabs***
Salt and pepper

* In New Orleans they sell what are called "gumbo shrimp." They are not the big shrimp that you use in a "stand alone" shrimp dish. They are used more for flavor than texture. I guess you could put some of the shrimp in early for the simmering and some later for the presentation. Some people in New Orleans even boil the shells and heads to get that serious shrimp flavor. I don't care for it myself; it has that "low tide" taste!

**If using whole crabs, scald live hard-shelled crabs and clean, removing the spongy substance and the "sand bag" on the under part. Break off and crack the claws and cut the body in half.

In a large frying pan:, fry okra in 2 tablespoons shortening approximately 30 to 40 minutes or until it ceases to "rope" (slimy strings connecting the okra); remove from heat and set aside.

In a Gumbo Pot or a large Dutch Oven over medium-high heat, melt the butter and fry the onions and celery about 5 minutes or until soft.

Add the shrimp, oysters, garlic, and bell pepper; simmer 2 minutes. Add tomatoes, parsley, bay leaf, Cavender's Seasoning, water or fish stock, green onion, fried okra, prepared Roux, and crabmeat or crabs. Add salt and pepper to taste. Let gumbo simmer for approximately 30 minutes.
Serve with hot rice, crackers, and file on the side.
Makes 6 servings.

>Kodiak's Pasta Bolognese
This is probably not what you're used to. I think this style of bolognese is scandinavian.

>The Meat
Thinly dice one onion, and fry it in butter or oil. When done but not browned, add 500g of ground beef. Stir this frequently.

>The Sauce
While the onions are frying, put into a pot:
>400g Tomato purée
> A few tablespoons tomato paste
> One buillion cube
> Lot's of powdered bell pepper
> A tablespoon or two of oregano
> some black pepper
Bring it to a boil, and stir while you're frying the meat.

>COMBINE
When the meat is done, pour the sauce over it into the pan. Stir a bit, and let simmer for ~10 minutes. Add a shit-ton of frozen or fresh (not dried) parsley. Seriously, use a lot.

Serve with pasta. Myself, I like putting ridiculous amounts of cayenne pepper on it while eating. You wouldn't believe the way all the flavors combine in this dish. The Parsley/Tomato/chili combo gives you this weird but awesome warm feeling at the back of your mouth.

• Mix flour, baking soda, baking powder, salt and cinnamon; make a well in the center and add sugar, oil, eggs and vanilla. Mix.
• Stir in carrots, coconut, walnuts and pineapple. Pour into pan and bake for about 45 minutes. The center will sink a little.
• Allow to cool then frost, I use canned cream cheese frosting.

(I use my cream cheese frosting recipe... I'm a spoiled brat and I don't like the canned cream cheese frosting.)

This is less 'spicy' and less sweet than normal pumpkin pie, if you want more spice add the amount it says on the back of the can of pumpkin, she likes less spice I like more :)

La Cucaracha's Mom's Pumpkin Pie

2 eggs slightly beaten
16oz canned pumpkin
¾ cup sugar
½ teaspoon salt
1 ½ teaspoon cinnamon
1 teaspoon ground ginger
½ teaspoon ground cloves
13 oz evaporated milk
1 large deep dish pie shell

Mix all ingredients well with a large fork. Pour into pie shell and bake at 425 degrees for 15 minutes, then 350 degrees for 45 minutes.

La Cucaracha's Mom's Green Beans

2 Lbs. Fresh Green Beans
1 Large Onion Diced
2 Tablespoons Minced Garlic
1 Teaspoon Accent
1 Tablespoon White Sugar
¼ cup Olive Oil
4 tablespoons Butter
6 cups of Chicken Broth
1 Ham Bone or Seasoning Smoked Pork Meat
Salt and Pepper to taste.

Place all ingredients in a large pot; add water until beans and hambone are covered.
Bring to a boil, turn heat down to simmer, checking every 20 minutes or so to see if beans are done. Depending on how tender the green beans are depends on how long to cook them. It usually takes about 1 ½ hour. I always remove all the meat before serving.

Add more salt and pepper as needed.

HOT Pork sausage is what she uses, I use turkey sausage for a 'healthy' version, but I also add about a 1/2 a tablespoon of cock sauce for a nice sweet heat hit.

La Cucaracha's Mom's Sausage Gravy and Biscuits

1 pound bulk sausage
1/4 cup flour
3 cups milk
salt and pepper to taste

Brown sausage in large frying pan, breaking it into small pieces. After sausage is cooked, add flour to the pan and stir it to coat the sausage.
Add milk, salt and pepper. Cook on medium until it boils and starts to thicken. Reduce heat to low and simmer until ready to serve, if too thick, just add more milk.
Serve over hot biscuits. Enjoy!

La Cucaracha's Mom's Stuffed Ham

16-18 pd. de-boned Corned Ham
4 - pounds kale
3 - pounds cabbage
1- pound watercress
1- bunch celery (stalks only)
2-large onions

Chop all ingredients into ½ to 1” pieces. You want consistency.
Bring a large pot of water to a rolling boil. Blanch ingredients, no longer than 3 minutes. Remove and drain. Let your ingredients cool to room temperature.

Spices:
4 tablespoons salt
4 Tablespoons black pepper
4 Tablespoons mustard seeds
1 Tablespoon celery seed
3 Tablespoons crushed red pepper flakes
2 Tablespoons ground red pepper flakes

Add spices to cool greens, mix well, with hands.

Cut large X’s around your ham and add stuffing, fill all cavities with stuffing, do not over stuff! Add a little extra stuffing on the outside of the ham.
Discard any leftover stuffing.

Wrap stuffed ham, several times with heavy-duty aluminum foil, at least 4 times, 5 is better. Place ham in baking pan little over half filled with water.

Place in 400-degree oven. Cook 15 minutes per pound. (Example 16 pound ham, 15 x 16 = 240 minutes = 4 hours.)

Ham should be fork tender, do not over cook.
Remove from oven, and water bath. Let cool on counter for an hour, and then place in a cold refrigerator.

*** Make ham 2 to 3 (three is better) days before serving, so spices will have time to mix threw
ham. *** Make sure you use a Corned Ham not a fresh ham or smoke ham! ***

Cut ham thin slices, I use electric knife. If you cut the ham, against the way you stuffed it, the stuffing will not fall out.

Serve cold. (with potato rolls <3, and mustard, she likes mayo)

THE WORLD'S BEST COOKIES

Not joking, that's what my mother's always called this recipe. I don't think she came up with it, but I certainly think she does it the best.

1 cup butter
1 cup light brown sugar
1 cup sugar
1 cup vegetable oil
1 egg
1 tsp vanilla
1/2 cup chopped pecans
1 cup rolled oats
1 cup crushed corn flakes
3 and 1/2 cups plain flour (all purpose)
1 tsp salt
1 tsp baking soda

Cream the butter and sugars together. Add egg and mix well. Add oil and vanilla, then mix. Add nuts, oats, and corn flakes. Sift together remaining dry ingredients and add to mixture. Spoon onto baking sheet and press down on each lump with a fork. Bake at 350 for 12-15 minutes or until golden. Transfer to racks to cool.

These cookies are crunchy, sweet, and absolutely live up to their name.

>Negroe Balls
(No really, that's their name.)

100g of butter
3dl (~1,3 cup I think) of oats
1,5 dl (~1/2 cup) of sugar
3 tablespoons pure cacao powder
Optional: 1-2 tablespoons strong coffee

Mix together thoroughly with your bare hands. Then shape them into golf-ball sized balls. After that, roll them in around in a plate covered in either:
Nib sugar
Oats
Chopped almonds
Shredded coconut (tradidional).
Put them in the fridge for a little while. Then gorge yourself on delicious Negroe Balls.

Cover watermelon rind with water and soak overnight. Change water at least three times over the course of the night. In a large pot cover ridn with water and cook until tender. Drain water. Tie lemon slices and the cinnamon stick in cheese cloth and put into a pot with the sugar and vinegar and bring to a boil. Add the drained rind, reduce heat and summer until transparent about 1 3/4 hours. Pack in jar and refrigerate. You can, can these if you want, or freeze it. But if you freeze it make sure the watermelon is still slightly firm because the freezing process kinda softens the rind.

Most of these are for special occasions or get togethers. I eat the soups often, but I like soup :D I've made all of these at least once. I wouldn't keep the recipe if I didn't like it. Things like my mom's green beans I don't make, but eat when she makes them. I don't like her no bake cookies but I'm not too fond of sweet things. Other people love them.

La Cucaracha's Husband's Favorite French Toast

Texas Toast bread
1 tbsp sugar
~2 tbsp milk
~1/2 tsp cinnamon
Butter to fry with

Melt enough butter to coat the bottom of the pan, on med to med-high heat (do not for the love of god burn the butter). Mix together eggs milk sugar and cinnamon or omit cinnamon (it's not a necessity my husband likes the cinnamon, and I do not, so he just sprinkles on a little at the end sometimes). Make sure everything is well incorporated. Dip the bread into the egg mixture and fry in the butter until golden brown.

Randomness about crabs

To steam crabs you need a ratio of 1 part apple cider vinegar to two parts beer to four parts water. STEAM not boil.

To season crabs you need a ratio of 1 part old bay two two parts flaked sea salt/kosher to 1 part red pepper (you can go half ground half flakes or all flakes).

Serve with vinegar, if I catch you with butter at my table I'll cut you with my butter knife.

Kitty litter cake

1 spice or German chocolate cake mix
1 white cake mix
2 large pkg of vanilla instant pudding mixed prepared
1 large pkg of vanilla sandwich cookies
green food coloring
12 small tootsie rolls
1 new kitty litter pan
1 new plastic kitty litter pan liner
1 new pooper scooper

prepare cake mixes and bake according to directions, prepare pudding ix and chill until ready to assemble.

Crumble white sandwich cookies, reserving ¼ cup, add green food coloring to the ¼ cup.

When cakes are cooled, crumbles into a large bowl. Toss with half of the remaining white cookie crumbs and the chilled pudding. Mix it with enough pudding to make it come together, do not add too much or else it will be soggy.

Line the kitty litter pan with the liner, put the cake pudding cookie mixture into the litter box. Microwave 4 tootsie rolls and make the ends rounded so it looks like poop and bury in the mixture. Sprinkle the other half of the cookie crumbs over top. Scatter the green cookie crumbs lightly on top to look like kitty litter. Heat and mold the rest of the tootsie rolls to look like poop and top some with kitty litter and others leave dry. Place some on the sides of the pan or off to a side for a disgusting effect.

Ingredients

* 1 cup butter, softened
* 1/2 cup white sugar
* 2 cups all-purpose flour
*
* 4 eggs
* 1 1/2 cups white sugar
* 4 tablespoons all-purpose flour
* 2 lemons, juiced

Directions

1. Preheat oven to 350 degrees F (175 degrees C).
2. In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of an ungreased 9x13 inch pan.
3. Bake for 15 to 20 minutes in the preheated oven, or until firm and golden. In another bowl, whisk together the remaining 1/12 cups sugar and 1/4 cup flour. Whisk in the eggs and lemon juice. Pour over the baked crust.
4. Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool. For a festive tray, make another pan using limes instead of lemons and adding a drop of green food coloring to give a very pale green. After both pans have cooled, cut into uniform 2 inch squares and arrange in a checker board fashion.

bacon and egg ice cream

8 bacon slices (1/2 lb)
1 1/2 tablespoons packed light brown sugar
2 cups whole milk
2 cups heavy cream
1 cup granulated sugar
1/4 teaspoon salt
6 large egg yolks
1 teaspoon pure vanilla extract

1) Put oven rack in middle position and preheat oven to 350°F
2) Arrange bacon slices in 1 layer (not overlapping) on rack of a large broiler pan. Bake 15 minutes.
3) Turn slices over and sprinkle evenly with brown sugar. Continue to bake, checking bacon every 5 minutes, until bacon is crisp and deep golden, 15 to 20 minutes more.
4) Transfer to parchment or brown paper (such as a grocery bag or butcher paper) to drain.
5) Heat milk, cream, granulated sugar, and salt in a 3-quart heavy saucepan over moderate heat, stirring occasionally, until sugar is dissolved and mixture is hot.
6) Meanwhile, beat yolks in a medium bowl with an electric mixer at high speed until thick and pale. Reduce speed to low and add hot milk mixture in a stream, mixing until combined.
7) Transfer custard to saucepan and cook over moderately low heat, stirring constantly, until mixture is thick enough to coat back of a spoon and thermometer registers 170 to 175°F (do not let boil). Stir in vanilla.
8) Quick-chill custard by transferring it to a bowl set into a larger bowl of ice and cold water and stirring frequently until cold, about 15 minutes.
9) Freeze custard in ice cream maker until almost firm. Meanwhile, cut bacon into 1/4-inch pieces.
10) Fold bacon into ice cream, then transfer to an airtight container and put in freezer to harden, at least 2 hours.

I made this with my friends. we were skeptical at first but it's very good.

(this is not my own recipe but it's freaking delicious).

Peanut Butter and Chocolate Pie

Set oven to bake at 350
Take 25 oreos and food processor them until there are no more whites, a semi-fine powder.
Add 4 tablespoons of melted butter to oreos and mix in well

Take the oreo mix and crush into pie tin to form crust.
Set in oven to bake for 5-7 minutes so that it sets.

Now take 1 cup creamy peanut butter and add 8oz softened cream cheese (mix well)
Add 1 1/4 cup powdered sugar (mix)
And then finally add 8 oz of cool whip (mix until fluffy)

Take fluffy delicious peanut butter mixture and put into pie crust (CRUST SHOULD BE COMPLETELY COOLED). Smooth it out or what not until it's all in there and then set in fridge for at least an hour.

It is very rich so you don't need huge slices, but it is delicious, addicting, and awesome to have in the fridge.
I suggest if you like peanut butter you make this at least once in your life.

1 cup whipping cream
1 cup gorgonzola cheese (not fucking carmbonzola, wombonzola, or dickgonzola, fucking GORGONZOLA)
Chorizo, of whatever kind you like best.

1. If your chorizo needs cooking, cook it first. Then chop it up into slices and set it aside. If it's cured chorizo, just slice it to any size you prefer to stuff in your mouth.

2. Get your water started for your ravioli.

3. In a heavy-bottomed saucepan, melt your butter, add your whipping cream gently, whisking. Add the gorgonzola. Chopping it up first will speed up the melting. Melting is what you want.

4. Add the parmesan reggiano, but leave a little left over to garnish.

5. Add a shitton of fresh ground black pepper. Toss your chorizo in.

6. Keep sauce hot but not boiling, while awaiting ravioli.

7. Drain ravioli, and immediately pour sauce+chorizo on top. Garnish with more parmesan, black pepper, oregano.

8. Get so fat. SO fat. Happily, this dish will work with both red or white wines.

Suggestions for ravioli: Costco has some damn good ravioli, actually. If you want to get really fancy, the lobster ravioli they sell is hella good. Or any cheese-filled ravioli, also good, likewise the butternut squash. Or, be a real man and make your own ravioli first. It's all good.

Chicken Cordon Bleu

4 chicken breasts skinless and boneless
4 thin slices prosciutto di Parma
1/2 pound Gruyere, grated
1/4 cup all-purpose flour
Kosher salt and freshly ground black pepper
1 cup panko bread crumbs
4 sprigs fresh thyme, leaves only
1 clove garlic, peeled and finely minced
2 tablespoons unsalted butter, melted
2 eggs
Extra-virgin olive oil

Preheat oven to 350 degrees F.

Lay the chicken breast between 2 pieces of plastic wrap. Using the flat side of a meat mallet, gently pound the chicken to 1/4-inch thickness. Remove the top sheet of plastic and lay 2 slices of prosciutto neatly over the top to cover the breast and sprinkle a quarter of the cheese over the prosciutto. Tuck in the sides of the breast and roll up tight like a jellyroll inside the plastic wrap. Squeeze the log gently to seal and twist both ends tight to form a nice log. Repeat with remaining chicken.

Season the flour with salt and pepper. Mix the bread crumbs with thyme, garlic and kosher salt, pepper, and melted butter. The butter will help the crust brown. Beat together the eggs and season so the flour, the eggs and the crumbs are all seasoned.

Remove the plastic wrap. Lightly dust the chicken with flour, dip in the egg mixture and gently coat in the bread crumbs. Lightly coat a baking pan with olive oil and carefully transfer the roulades onto it. Bake for 20 to 25 minutes until browned and cooked through.

Y'mean, like, maybe, "In the style of Gorgonzola"? The area for which it's named? Where the fucking cheese originally comes from?

Son, I am dissapoint.
